Las industrias procesadoras de pescado deberán tener, además de las secciones o áreas comunes a todas las fábricas de alimentos, las siguientes como mínimo: -Muelle dé recepción. -Sección de proceso. -Area de pesaje. -Area de lavado. -Area de selección y clasificación. -Area de eviscerado. -Area de descabezado. - Area de fileteado. -Area de troceado. -Area de glaseado. -Area de embalaje y pesaje. -Area de congelación y almacena miento.
