La inspección sanitaria de carnes frescas y congeladas se realizará por el sistema de muestreo, comprobando la temperatura de la masa muscular profunda, así como sus características organolépticas. Además se recurrirá a cuantos medios técnicos sean necesarios, desde el punto de vista sanitarios ,exigiéndose en todo caso los registros termográficos de las cámaras de almacenaje desde el momento del embarque.
