º . Auditorías . Las fábricas de alimentos dentro del proceso de implementación del Sistema Haccp, deberán realizar auditorías del Plan Haccp, practicadas por un grupo interno de la fábrica o por agentes externos, las cuales deberán constar por escrito; sin perjuicio que el Plan Haccp, los registros del mismo y los prerrequisitos enunciados en el artículo 5º del presente decreto, queden a disposición de la autoridad sanitaria cuando esta lo solicite.
