Denomínase leche higienizada el producto obtenido al someter la leche cruda entera, semidescremada o descremada, aun proceso físico adecuado para destruir su flora patógena y la casi totalidad de su flora banal, sin alterar de manera esencial ni su valor nutritivo, ni sus características físico-químicas u organolépticas.
