Denomínase sacrificio de emergencia, el beneficio necesario de cualquier bovino, porcino, equino, ovino o caprino que haya sufrido un accidente o una lesión, que no exija necesariamente el decomiso total de su carne, pero que, sin embargo, exista la posibilidad de su deterioro, a menos que se proceda a su sacrificio en forma inmediata.
