Denominase Inspector Sanitario Auxiliar al funcionario que ha recibido capacitación en inspección sanitaria de mataderos y ha sido autorizado por el Ministerio de Salud o sus entidades delegadas, para colaborar o auxiliar al Medico Veterinario Inspector en el ejercicio de sus funciones propias.
