Equipo mínimo . Para el proceso de higienización de la leche se requiere el siguiente equipo mínimo

a)

Sistema de clarificación y filtrado para la eliminación de las impurezas que se encuentren en la leche cruda, reconstituida o recombinada, con anterioridad al proceso de higienización.

b)

Homogeneizador;

c)

Equipo para higienización de la leche;

d)

Sistema de concentración de sólidos que permitan la eliminación de parte del agua cuando se trate de leche evaporada;

e)

Equipo para enfriamiento, con el objeto de mantener la leche líquida a una temperatura inferior a 4ºC., inmediatamente después de su higienización cuando se trate de leche pasteurizada o irradiada y a temperatura ambiente cuando se trate de leche ultrapasteurizada o esterilizada;

f)

Tanque para el almacenamiento de leche fría higienizada, dotada de agitadores mecánicos y de termómetros.
