Es la persona proveída por la planta de beneficio que cumple con la idoneidad y experiencia determinada por el Invima, para apoyar las responsabilidades de los establecimientos, en cuanto a garantizar la inocuidad de la carne y productos cárnicos comestibles, sin que ello implique funciones de inspección, vigilancia y control”.
