Los responsables del matadero deberán llevar un libro o sistema de control en donde se registre diariamente el ingreso de los animales, con indicación clara de su procedencia. Inmediatamente después de su desembarque los animales deberán ser marcados de tal manera que puedan identificarse con facilidad.
