Previamente a la inspección post-mortem deberá procederse a la fase preparatoria de vísceras y canales, con el objeto de presentar el órgano o conjunto de piezas en condiciones de permitir una eficiente inspección y de conservar higiénicamente la parte comestible.

Parágrafo

La fase preparatoria deberá ser realiza por operarios idóneos del matadero, teniendo en cuenta los limites permisibles sobre velocidad máxima de sacrificio, la cual deberá ser tal que no llegue a causar graves problemas en la calidad del procesamiento y de la inspección post-mortem.
