Calidad del vapor de agua . Cuando en el proceso de ultrapasteurización y esterilización se utilice calentamiento directo, la calidad del vapor de agua deberá ser de grado alimenticio, saturado, seco. exento de aire y conducido por tuberías de acero inoxidable.
En la ultrapasteurización con vapor directo, después de su tratamiento térmico la leche deberá recuperar su composición original.
