Autorizanse los siguientes tiempos y temperaturas en los procesos de higienización. Pasterización lenta: La leche deberá permanecer durante 30 minutos a una temperatura entre 61ºC. y 63ºC. Pasterización rápida: La leche deberá permanecer entre 15 y 17 segundos a una temperatura de 72ºC. a 76ºC. Ultra pasterización: La leche- deberá permanecer durante un tiempo máximo de 2.4 segundos a una temperatura de 135ºC. a 150ºC. Irradiación: El tiempo, espesor y longitud de onda deberá ser aprobado por la autoridad sanitaria competente, de acuerdo con el método utilizado.
