Entiéndese por enfriamiento de la leche en hatos de primera categoría, el proceso a que se somete la leche producida en estos hatos, inmediatamente después del ordeño, con el objeto de conseguir, mediante el uso de cortina da enfriamiento, tanque de expansión u otro método técnico aprobado por la autoridad sanitaria correspondiente, que su grado de temperatura sea inferior a 10ºC.
