Las áreas destinadas para el funcionamiento de calderas estarán aisladas de las salas de proceso de carne y debidamente protegidas para evitar cualquier tipo de contaminación de éstas. Igual medida deberá tomarse en relación con el área que se destine para la preparación y almacenamiento de subproductos.
